Describes the composition of mustard seed in terms of oil, protein, mucilage and carbohydrates; amino acids in mustard compared with soy and canola; storage proteins, protein recovery technologies and applications.

The demand for plant-based proteins is steadily growing due to rising incomes globally, increased interest in health/nutrition, and concern for animal welfare and the environment. Plant proteins are now being incorporated into processed foods, energy drinks, sport nutrition products and dietary supplements for their functional attributes and nutritional benefits.
